This marks my third visit/time having the same menu. Obviously, it IS good, which explains my repeated visits, but I've lost all excitement about tasting the menu now, hence alas! All good things (should) come to an end. (I was told that they are changing the menu soon, but I was also told the same thing during my last visit in December.)
Started the night with a sweet citrus fizz.
Smoked Herring: Horseradish Mash and Filo Tart
Anyway, you are right to experience a déjà vu while reading this because this experience is 97% similar to my last two visits.
Lamb Samsa Cones: Tartare in Coffee Feuille de Brick
Caviar and Kaya: Two Caviars, Homemade Kaya and Argentine Red Shrimp (my favourite dish!!)
Nomads Nan: Hunter-gatherers Butter
Maitake Mushrooms: Tahini Glaze, Suneli and Sesame Seeds
Carrots in Soil: Charred Heirloom Carrots, Caraway Olive Oil Emulsion and Coffee Crumble
Salat: Grilled Pears, Seasonal Greens, Crystalised Walnuts, Cherry Vinaigrette and Anchovy Sauce
Pelmeni (extra dish #1 for being a loyal diner HAHAH)
Scallops: Koji Cured Scallops, Spiced Burnt Corn on Lentil Cracker
Squid Laghman: Charcoal Kissed Squid Noodles, Smoked Szechuan Paprika Sauce, Capsicum and Pine Nuts
Sturgeon: Soy Butter Emulsion, Crunchy Grains and Dill
Beshbarmak: 72 Degree Wagyu Cheek, Tea Spiced Broth, Pickled Shallots, Soubise and Potato Sheets
Beef Tongue: 48 Hour Braised Beef Tongue, Burnt Whole Grain Mustard Cream, Spiced Beef Jus and Almonds
Pomegranate: Pomegranate and Watermelon Sorbet
Foie in Ash: Foie, Cherry Gastrique and Charred Breadcrumbs (my second favourite dish!!)
Hunter's Plov: Carnaroli Risotto, Dry Aged A4 Wagyu, Pickled Heirloom Carrots, Tea Quail Eggs and Brandied Raisins
Almaty: Smoked Apple Puree, Celery Sorbet, Bay Leaf Tart, Gorgonzola and Cinnamon Yoghurt
Medovik: Honey Cake, Sour Cream Ganache, Persimmons, Rose Crystals and Yogurt Sorbet
10/10 would still recommend this place to everyone!
