Pollen
I love fine dining. Sometimes I do agree that it's pretentious dining, lol, but I'm always amazed by how much thought and effort is put into creating different elements that complements each other on a plate. To be mesmerized by theatrical effect, the story, the visuals, the taste. Sure, sometimes they work, sometimes they don't. But art is subjective anyway. And that's edible art for you (or for me, at least).
Finally had the chance to have dinner at Pollen for wanz's birthday!
I only have photos of what I had, which is the vegetarian tasting menu. (Wanz had the regular menu)
Amuse-bouche #1: Mushroom & Feta. That's feta cheese in a cracker.
Wanz's Amuse-bouche #1 was a "Cherry" liver pâté. Is this Pollen's take on Heston Blumenthal's "Meat Fruit"? It has done a darn good job in any case; it looks much more delicate than the mandarin orange (read here)

Had their signature cocktail, Pollen as well. It was nice, though I did regret emptying the passionfruit into my drink because biting into the seeds was such a bitch when all I wanted was just a drink, like, just the liquid.
First course: Pollen's Garden. 16 different elements altogether, with the mustard ice cream as a centerpiece. My favourite dish of the night. It was a myriad of flavours and textures which complemented each other very well. From the pickled beetroot and radish, to the flavorsome pistachio puree - it was mind-blowing. Obviously I suck with words, but all you need to know is this: it is orgasmically good.
Second course: Quinoa & Hazelnuts, zucchini, and smoked ricotta. It was ok, I'm not a fan of quinoa to begin with, and this dish certainly did nothing to win me over lol.
Third course: Grilled artichokes, pickled pear and parmesan foam. The grilled artichokes had a meaty texture, and the "pickled" pear was more like mulled pears. Great stuff
Fourth: Salt baked celeriac. This dish was the bomb. It was served with a parmesan cream sauce, which was sooooooooooooooo good
Tea at raffles. This was definitely the most puzzling (in a good way) dish because the "tea" was poured into the cup right before us, and it solidified into jelly within 20 seconds. We weren't expecting it to be jelly, since we weren't told that it was going to be jelly. The only instructions we received was "please allow the tea and ice cream to sit for 20 seconds before you dig in". It was a nice surprise, and I love ice cream, hahahah
Warm almond biscuits with mascarpone cheese and cherry. This was really good too!
Dessert: Cherries, served with a cherry parfait and roselle jus.
"Give it a good whack", our server said. That was fun.
Birthday cake for the birthday girl!
Chcocolate mousse cake. (Nothing beats Coco Exotic from Four Leaves though. Absolutely nothing.)
Petit four: Fennel Truffle (the one with the gold foil) and Calamansi Truffle.
The fanciest vegetarian meal I've had but to be fair, I've only started this diet for like, 1 month rofl
21°C days means that layering days are here heheh this is my first winter in Singapore (LOL) will there ever be another one in my lifetime?
